It demands Champagne, although occasionally a crisp sauvignon blanc or a rose may do, so long as the wine is dry. The more traditional Champagne version will result in a cocktail that is a little bit cleaner, fresher, and more effervescent, but we think you’ll find the alternatives more than satisfactory. Trying sake or a clean, dry vermouth can be rather enjoyable for the more daring.
